Sauteed Kale with Garlic
This is a simple and delicious way to prepare Kale as a side green for any meal. Go especially well with fish, chicken, or tofu.
Kale, any variety (cut into 1" pieces remove spine)
Olive Oil / butter
Balsamic vinegar / lemon juice
Maple Syrup
Blue Cheese (optional)
Cashews (optional)
Sautee garlic and onions in olive oil / butter. Add kale. Saute for a couple of minutes. Drizzle maple syrup over kale and splash with balsamic vinegar / lemon juice. Remove from heat. Top with blue cheese and/or chopped cashews if desired.
