Roasted Green Beans
Excellent served as a side dish or appetizer, warm or cold. Green beans are a great source of antioxidants and fiber. The pine nuts add a warm flavour along with the nutritional punch of essential fatty acids for a healthy heart.
3-4 cups green beans
sea salt
olive oil
balsamic vinegar
freshly toasted pine nuts
Thoroughly wash your green beans and chop off the ends. In a bowl, mix the green beans with approximately 2 teaspoons of olive oil, minced garlic (2-3 cloves), sea salt and pepper to taste (remember: be a miser with the salt and a devil with the pepper!). Spread mixture onto a baking sheet and roast in oven at 400F for 30-40 minutes until the beans obtain a texture pleasing to your senses. Before serving, mix in freshly toasted pine nuts and drizzle with balsamic vinegar.
