Fruit and Spinach Salad
Whether you add apples, pears, oranges, or berries this salad is a delicious way to eat up your local greens!
1/4 cup coarsely chopped pecans or any other nuts or seeds you fancy!
1 tablespoon balsamic vinegar
1 tablespoon liquid honey
1/2 teaspoon Dijon mustard
1 tablespoon poppy seeds
pinch salt
1/4 cup extra virgin olive oil
4 cups spinach, cut off any discoloured stems
1 1/2 cups sliced fruit or berries!
1/4 cup crumbled cheese, maybe a soft goat cheese? or a hard cheddar? If you are not into dairy you can always add more nuts!
1. In a small bowl, whisk the vinegar with the honey, Dijon, poppy seeds and salt. Slowly whisk in the oil until well combined.

2. Place spinach, fruit, nuts and/or seeds in your serving bowl. Drizzle with vinaigrette and garnish with the crumbled cheese, if using.

3. Enjoy!
