Ginger Molasses Cookies
These cookies are obscenely delicious. Best results when using fresh organic ginger and stone ground flour. Add lemon zest for an added flavour boost.
Ingredients
Dry:
2-1/4 Cups Soft Red Stone Ground Wheat Flour
1 Tspn Baking Soda
3/4 Tspn Ground Cinnamon
1/2 Tspn ground clove
2 Tsp Ground Ginger , or, 2 Tblspn fresh ginger, chopped (preferred)
Wet:
1 Tblspn water
1 Cup Cane Sugar
3/4 Cup Butter
1 egg
1/4 Cup Molasses
Just before they go in the oven:
2 Tbspn Sugar (to coat cookies before baking)
Directions
Combine dry ingredients.
Cream butter, sugar, molasses, egg, water, lemon zest (optional)
Combine wet and dry ingredients.
Shape and roll into walnut size balls.
Flatten slightly. Sprinkle with Sugar. Bake at 375 for 10 minutes.
