Wild Blueberry Waffles
This is a basic waffles recipe that is sure to impress. For best results, preheat your waffle iron to medium high heat. Pair with some maple style bacon from Meadowbrook Farm for a very satisfying Sunday brunch.
Dry Ingredients:
2 Cups Soft Red Whole wheat flour (Longspell Point Farm)
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp Eco Cane sugar
pinch salt

3 Egg Whites (Rocky Top Farm)

Wet Ingredients:
3/4 cup milk (East Coast Organic)
3/4 cup yogurt (Ran-cher Acres)
3 egg yolks
2 Tbsp Oil (Olive, sunflower, safflower,etc)
1 cup frozen wild NO spray blueberries (Forest Hills Farm)
Use your imagination - Bananas, cranberries, raspberries, blackberries
Separate egg whites from egg yolks. Beet egg whites until stiff, set aside. Mix dry ingredients in separate bowl. Combine wet ingredients with a fork in a bowl. Add to dry ingredients and stir just until moistened. Fold in egg whites. Add frozen blueberries, or other fruit additions. Pour batter into a pre-heated waffle iron and allow to cook for approximately 4 minutes per waffle. Serve with hot or cold maple syrup, fresh fruit, and mediterrannean style yogurt for a truly scrumptious weekend brunch.
