Mango Marinade
Mango, both in its green and ripe form is a very good tenderizing agent, and is therefore ideal to include in any marinade. This particular marinade is a sweet, lightly spiced delight that works well with meat, poultry or vegetables.
4 shallots
2" piece peeled ginger
1 clove garlic
2 tbsp. lime juice
1/2 tsp. ground coriander seed
1/4 tsp. salt
1/8 tsp. pepper
1/3 cup olive oil
1 medium mango, chopped
In a food processor, process garlic, shallots and ginger. Add mango and puree for 30 seconds. Add lime juice, coriander seed, salt and pepper.Then process, adding oil in a thin stream while processor is running.

Makes 2 cups.
