Whole Wheat Pizza Dough
This pizza dough uses half white flour and half whole wheat flour making a more nutritious pizza crust that's higher in fiber. You can substitute wheat flour with light spelt and whole spelt flour and omit the gluten flour all together if your diet is wheat-free.
2 cups warm water
1 teaspoon dry active yeast
1/2 teaspoon honey
1 1/2 tablespoons olive oil
1/2 teaspoon salt
1/4 cup gluten flour
2 cups hard white flour
2 cups soft sifted wheat flour
1. Fill a large mixing bowl with warm water. Stir honey into water, then add the yeast without stirring. Let rest 10-15 minutes, until bubbles appear.
2. Add oil, salt, gluten flour, all of the whole wheat flour, and half of the hard white flour. Knead for 10 minutes adding remaining white flour as you go until the dough springs back when poked with your finger. Place back into clean oiled bowl, and cover with a tea towel. Place bowl over pot of hot water until dough doubles in size. Makes enough dough for 2 large pizzas.
