Creamy Mushroom Soup
This soup is the perfect comfort food on a cold winter's day. It's creamy and delicious. Give it a try!
2 tablespoons butter or oil
1 large onion
1 large garlic clove
3 cups chopped mushrooms
2 Tablespoons flour
2 1/2 cups chicken stock (can use vegetarian stock)
1/2 teaspoon thyme (scant)
1/3 cup whole milk powder
1 1/2 cups water
1/2 8 oz. package cream cheese
3/4 teaspoon salt
Saute onions and garlic in butter or oil until soft. Add mushrooms and thyme and saute 5 minutes. Add flour and cook 1 minute more. Add stock and simmer until mushrooms are tender. Blend water and whole milk powder together with cream cheese. Pour back into the pot. Blend the soup, in batches if necessry, but do not make the mushroom pieces too small.
