Burrito Filling
Mexican fiesta anyone? Invite over your best amigos to try these mouth-watering bean burritos. Pickled jalepenos and fresh cilantro are the perfect flavour enhancers for this traditional Mexican dish. This tasty recipe can also be altered to suit your spice pallet - just add more peppers! Your mouth, and stomach will say "Gracius"!
1 1/4 cups pinto beans
1/2 teaspoon salt
1 onion
1 teaspoon garlic
1 1/2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1/4 can tomato paste
1 teaspoon pickled jalepenos, minced
1 lime juiced
1/2 cup cilantro, chopped
1 tbsp oil for sauteeing
1. Soak beans overnight (see cooking tips), and cook.
2. Puree 1/2 of the beans, adding enough cooking water to achieve a smooth consistency.
3. Sautee onions and garlic in oil with salt until transluscent.
4. Add remaining ingredients, including whole beans and bean puree. Add more cooking water and salt as needed to reach the desired texture and taste.
5. Scoop filling into burrito shells and cover with grated mozzarella or Monterey Jack cheese.
6. Garnish with chopped scallions or peppers and bake until cheese melts.
