Cabbage Rolls with Turkey
Here is a scrumptious way to prepare all varieties of cabbage in a well balanced meal for the whole family, cabbage naysayers and all.
Cabbage (Chinese, Savoy, Red, or Green - Take your pick.)
1 cup of cooking onion
1 lb of free range ground turkey
2 large heads of garlic (optional)
1 medium size leek (optional)
1 medium size green pepper (optional)
1 medium size red pepper (optional)
2 stalks of celery
2 large carrots, peeled
2 - 3 cups of cooked rice (Basmati, Jasmine or White long grain rice)
2 free range eggs
Sea salt
Fresh ground pepper
1/4 cup Havarti/Parmesan/Romano Cheese, grated (optional)
Tomato Sauce (preferably seasoned with fresh herbs such as basil and oregano) Homemade is great but canned pasta sauce will do in a pinch. Classico brand is quite flavourful and Muir Glen produces a completely organic pasta sauce that is a bit more expensive but worth every penny.
If you follow these simple instructions, you will be sure to make an impression with your dinner guests.

Step 1 - Prepare the stuffing.
Cook the rice of your choice in a rice cooker, or in a pot employing a conventional stove top method. Cut onions and leeks into small bits. Saute in butter or cooking oil until the onions become translucent.

Meanwhile, chop the carrots, red and green peppers, celery and garlic into little bitty pieces. In a large mixing bowl, combine chopped vegetables, sauteed onions and leeks together with ground turkey, cooked rice, minced garlic, salt and fresh ground pepper. Beat the eggs and combine with mixture.

Step 2 - Prepare the Cabbage
Remove the stem from the cabbage by inserting a knife at the base and slicing out the core.

Place cabbage with the core removed in a pot of boiling water for 10 - 15 minutes, until the cabbage leaves are limp enough to be removed from the core.

Pre-heat the oven to 300 degrees fahrenheit.

Step 3 - Stuff, tuck and roll the cabbage
Carefully remove a cabbage leaf from the cooked head of cabbage. Trim the base of the leaf to remove the woody portion. Place two spoonfulls of mixture at the base of the leaf. Roll the cabbage leaf around the mixture and tuck in the sides before completing the roll. Place the stuffed cabbage roll in a (8" x 12") casserole dish, two over and six down. Smother with tomato sauce and bake for 45 minutes at 300 degrees fahrenheit. After 45 minutes, remove the cabbage rolls from the oven and sprinkle with your choice of grated cheese(s). Bake for an additional fifteen minutes at 350 degrees or until cheese is lightly browned.

Remove from the oven and serve with with fresh bread and your choice of salad for a sustainable, well balanced meal that is healthy and delicious.
