Breakfast Granola Bars
These are a great grab-and-go food for busy people. Grains, dry fruit and nuts give them lots of staying power to keep you fueled to your next meal. Inspired by a recipe from Mollie Katzen's "Still Life with Menu".
2 cups rolled oats
1 cup whole wheat flour
1/4 cup dry skim milk powder
6 tbsp sugar
1 cup apple juice
1/4 cup ground flax seeds
1/2 cup dates, snipped in small pieces
1/2 cup chopped dried pineapple, pear, cantelope OR apricots
1/2 tsp cinnamon
1/4 cup flaked coconut
1/4 cup shelled pumpkin or sunflower seeds
pinch of salt
1/2 cup oil
extra coconut to garnish
1/2 cup semisweet chocolate chips
Preheat oven to 350 deg Fahrenheit. Grease a 9 X 9 pan.

Combine all ingredients except extra coconut and chocolate. Pat into the pan with moist hands. Sprinkle with extra coconut and then bake for 25 to 30minutes until lightly browned around the edges. Cut while still hot but let cool completely before taking out of the pan.

Melt chocolate chips in the microwave or in a can in a pot of hot water. Drizzle over bars or alternatively you can dip half of each bar in the chocolate.

These have a lovely cakey texture and are sweet and rich with fruit and nuts. Wrap individually for an alternative to high priced, highly sugared granola bars.

Makes one dozen substantial sized bars.
